Hope you are well. It’s a lovely day outside. I can finally see our spider lights that we set outside for our igloo a couple months ago showing it’s face on the front yard, after buried for months by the mighty snow hahahaI have muffin recipe to share today by the way! And since it’s sunny and lovely, these muffins are so fitting as I used mandarin in them, which of course you can subs with orange if you like to 🙂

My oldest said the top of the muffins remind him of sugar cookies in a way or two. Should you try this recipe, let me know if you think he has wild imagination or that he is actually correct? 🙂
Mix dry:
- 1 c flour
- 1/4 c sugar
- 1 tsp BP
- 1/2 tsp BSoda
- A pinch of salt
Mix wet:
- 1/2 c of canned mandarin with it’s juice, process to juice (or you can use 1/2 c orange juice)
- 1 ripe banana
- 1/4 tsp lime juice
- 1/2 tsp vanilla essence
- 2 tbsp vegetable oil

How To
- Mix dry and wet to combine
- Mix in generous 1/4 c vegan chocolate chips
- Bake in preheated 350F for 25 minutes
- Cool on rack

Ingredients
Dry Ingredients
- 1 c flour
- 1/4 c sugar
- 1 tsp BP
- 1/2 tsp BSoda
