Mandarin Chocolate Chip Muffins

Ingredients

Dry Ingredients

  • 1 c flour
  • 1/4 c sugar
  • 1 tsp BP
  • 1/2 tsp BSoda
  • A pinch of salt

Wet Ingredients

  • 1/2 c of canned mandarin with it’s juice process to juice (or you can use 1/2 c orange juice)
  • 1 ripe banana
  • 1/4 tsp lime juice
  • 1/2 tsp vanilla essence
  • 2 tbsp vegetable oil

Instructions

  • Mix dry and wet to combine
  • Mix in generous 1/4 c vegan chocolate chips
  • Bake in preheated 350F for 25 minutes
  • Cool on rack
