I guess we can never fully trust weather prediction. Rained now and then last night, rained around 6 AM, and now it’s raining again. I was so hoping we would get a hot week per news said. Hottest week we’d see, they said, and yet it’s wet, wet, wet and only 12C in reality π
Good thing is, we have this super easy and delicious cookie to binge today π
My boys love them. This is actually my go to cookie recipe when I want a nice soft chocolate chip cookie. Easy to mix and match ingredients and always comes out yummo. Believe me π

2 1/4 c flour
1/4 c cocoa powder
1 tsp Bsoda
A generous pinch of salt
2 eggs
1 scant c extra light tasting olive oil
1 c dark brown sugar
1/2 c sugar
1/2 vial/small bottle of rum oil
1 tsp vanilla essence
1/2 bag mini chocolate chips
1 large handful golden raisins
In a bowl, mix flour, cocoa powder, baking soda and salt, set aside
On another bowl, cream eggs, oils, and sugars, for 5 minutes
Stir in dry ingredients into wet, until completely combined, folding in chocolate chips and raisins
Drop per spoonful on aluminum foil lined cookie sheet, and bake for 8-10 minutes on preheated 350F
Let cookies stand on sheet for 3-5 minutes, then move them onto cooling rack
Cool completely before storing

Double Chocolate Rum Raisin Cookies
