I have a great cookie recipe to share today, super easy to make, flavorful, and a big hit in my household 😊
Cranberry with mandarin peel and a hint of spices make a powerful mix 😊

2 3/4 c flour
1 tsp cream of tartar
1 tsp BSoda
1/2 tsp salt
1 c dried cranberries
2 mandarin skin peel
1/4 c sugar
1/2 tsp cinnamon powder
1/2 tsp allspice powder
1 c unsalted butter
1 1/4 c sugar
1 egg
1 yolk
1 tsp vanilla
A couple drops almond oil
Mix dry ingredients in a ball, set to side
Mix dried cranberries and grated mandarin peel, set aside
Mix sugar, cinnamon powder and allspice powder, set to side
Cream butter and sugar for 2-3 minutes, then mix in egg, egg yolk, vanilla essence and almond oil, until just combined
Mix dry ingredients into wet, but do not overmix, then fold in cranberry mixture. Chill dough for 30 minutes
Scoop dough per 2 tbsp, shape into round, and roll it into sugar coating
Bake cookies for 10-12 minutes, on preheated 400 F
Let cookies stand on tray for 5 minutes before cooling them on rack
Cranberry Snickerdoodle
