I hope it’s gonna be a happy one for sure. Monday is often blah after a weekend 🤣
How was your Halloween? It wasnt rainy nor snowing this year, for us up here in the North, so goblins, superheroes, witches and foodies were out and about early. I checked my security camera, they started stopping by at 5 PM 😁
My youngest went out trick or treating with 2 of his classmates. Three of them were in food costumes, of Hotdog, Pizza, and Taco. Adorable 😁
Anyways. Here is recipe for today 😊 (I actually forgot to take any pictures after baked!)

2 c flour
2 pouch Quaker instant oatmeal, apple cinnamon flavor
1 tsp Bsoda
A pinch of salt
2 eggs
1 c peanut oil
1/2 c coconut sugar
1 tsp vanilla essence
1/4 c mini chocolate chips
In a bowl, mix flour, instant oatmeal, baking soda, and salt
Preheat oven to 350 F and line cookie sheet with either parchment paper or aluminum foil
Using food processor, mix eggs, oil, vanilla essence and sugar until completely combined
Pour wet ingredients into dry ingredients and fold in chocolate chips, mix well
Drop batter by cookie scoop, and bake cookies for 8-10 minutes
Cool on rack before storing
