Double Chocolate Rum Raisin Cookies

Ingredients

  • 2 1/4 c flour
  • 1/4 c cocoa powder
  • 1 tsp Bsoda
  • A generous pinch of salt
  • 2 eggs
  • 1 scant c extra light tasting olive oil
  • 1 c dark brown sugar
  • 1/2 c sugar
  • 1/2 vial/small bottle of rum oil
  • 1 tsp vanilla essence
  • 1/2 bag mini chocolate chips
  • 1 large handful golden raisins

Instructions

  • In a bowl, mix flour, cocoa powder, baking soda and salt, set aside
  • On another bowl, cream eggs, oils, and sugars, for 5 minutes
  • Stir in dry ingredients into wet, until completely combined, folding in chocolate chips and raisins
  • Drop per spoonful on aluminum foil lined cookie sheet, and bake for 8-10 minutes on preheated 350F
  • Let cookies stand on sheet for 3-5 minutes, then move them onto cooling rack
  • Cool completely before storing
