Yay! Friday at last, and its a sunny, warmer, morning. Double yay. Feels like whenever it’s a sunny morning, it’s gonna be a great day π To top that. I only have 1 more season to go of Fear The Walking Dead, so it’s triple yay. Been watching it like religiously whenever I can, but it’s dragging too long, and yet I want to know the ending, so I keep on watching π€£ I think the crazy is me, not the Walkers π« I’m gonna need a new TV show to watch soon. For today’s recipe share, it’s a simple crockpot recipe. Corned beef brisket, my way, that is π

2.1 lbs corned beef brisket
1 med onion
3 bayleaf
1 tsp mustard seeds
1/2 tsp black peppercorn
1/2 tsp mustard seeds
Black pepper
4 bayleaf
3/4 c no salt added beef broth
Potatoes
Baby carrots
1 head of broccoli
1/2 tsp ground coriander
Boil brisket for 5 minutes, and dump away the boiling water
Into a small slow cooker pot, place quartered onion and bayleaf, as well mustard seeds, then place boiled brisket on them, making sure the brisket sit on those nicely
Pour broth in
Grind mustard seeds and rub them on the top of the brisket, as well sprinkle top with freshly cracked black pepper, then add in 4 more bay leaf, spread out here and there. Cook brisket on high for 6 H
Meanwhile, cut broccoli flowers, quarter your potatoes, and place them into a large bowl, along with baby carrots. Rinse and soak them in water until ready to use
Once 6 H is up, add in veggies (discard the soaking water) in the crockpot, and continue cooking on high, for another 3 H
