Today is thunderstorm, and tomorrow all day rain for at least 2 days. We are looking for tons of rain again this week. Happy day.

Anyhoo.
Today am sharing a sweet dumpling recipe from Hungary, which I filled with plums and apricots.

- 5 medium size potatoes
- 2 1/2 c flour
- Salt (1/4 or 1/2 or even 1 tsp if you like – dumpling is normally tasteless, but sweetened with the fillings and topping)
- 1/2 tbsp sugar
- 1/3 c fat (butter/margarine, df or regular, either works)
- 2 eggs worth aquafaba (6 tbsp)
- Plums and apricots (either or both)
- Sugar as needed
- Brown sugar as needed
- Cinnamon powder as needed
- Water for boiling
- 1 tub breadcrumbs
- 3 tbsp cooking oil
- Icing sugar

Hungarian fruit dumplings
Ingredients
- 5 medium size potatoes
- 2 1/2 c flour
- Salt 1/4 or 1/2 or even 1 tsp if you like – dumpling is normally tasteless, but sweetened with the fillings and topping
- 1/2 tbsp sugar
- 1/3 c fat butter/margarine, df or regular, either works
- 2 eggs worth aquafaba 6 tbsp
Filling
- Plums and apricots either or both
- Sugar as needed
- Brown sugar as needed
- Cinnamon powder as needed
- Water for boiling
Coating
- 1 tub breadcrumbs
- 3 tbsp cooking oil
Topping
- Icing sugar
Instructions
- Boil potatoes until tender, mash
- Mix flour, salt, sugar
- Add in potatoes
- Add in df butter (or regular)
- Add in aquafaba (or eggs)
- Knead
- Roll flat and cut into portions
- Halve plums and apricots, remove stones
- Place 1/2 – 1 tbsp sugar on dough, top with apricot OR place 1/2 – 1 tbsp brown sugar and sprinkle with cinnamon powder, top with plums
- Seam to seal into balls/rounds
- Bring enough water to boil, drop dumplings and cook til floating
- Meanwhile, brown breadcrumbs in cooking oil
- Once dumplings floating, roll into breadcrumbs
- Sprinkle with icing sugar before serving
This is one of my favourite dishes. It seems unusual but is so delicious! I noticed that you called for eggs or aquafaba. We never added any eggs to the dough. In fact we mostly made the dough from leftover mashed potatoes so they already had some butter and cream and we just added flour. You might want to try it without the eggs/aquafaba. I bet you won’t notice any change in flavour.
