Another rainy day we are having here in Alaska Highway. Soooo many giant mosquitos due to it.
Washed the kids pool the other day, but with raindrops, the water inside the pool accumulated so much dirt somehow, have to clean it again, especially since I noticed an earth worm swimming in it, like what????!!! Yikes! ?
Earlier I prepared this dish for lunch. One of my favorites when it comes to simple dishes to prepare.
It is called krumpli teszta, which is basically mashed potatoes mixed with pasta ????
Regularly the Hungarians would use egg noodles, curly pasta etc, I do not have any of those, just spaghetti hahahha
No complaints from the boys and they finished the whole, so WINNING!
- Broken spaghetti as needed (2-3 servings)
- 4 potatoes, cubed
- 1/4 onion, chopped/diced
- 4 garlic, chopped
- 2 tbsp butter/margarine/ dairy free or regular, whichever. You can also use vegetable oil, if not just water
- Vegeta powder
- Smoked paprika powder
- Pepper powder (black or white)
Method:
- Heat butter, saute garlic and onion until fragrant. Stir in cubed potatoes, then pour in 1/4 c water (when needed, add another 1/4 – 1/2 c water)
- Cook covered, until potatoes are tender
- Season with Vegeta powder and paprika powder, with a pinch of white pepper powder
- Take off from heat, and mash potatoes
- Mix mashed potatoes with cooked pasta (broken spaghetti) and serve 😀
Pasta:
- Cook pasta until al dente, drain
