Roasted Pumpkin Chili

We make a lot of soup and stew whenever Winter is here, as Winter in Canada can be sooooo cruel, – 43 C hahaha

That being said, you will find various chili beans recipe on the website 😀

For the following chili, I roasted the pumpkin myself 😀

Ingredients

  • 2 tbsp vegetable oil
  • 5 garlic sliced
  • 1 small purple onion diced
  • 250 g ground beef
  • 2 tsp cumin
  • 1 tsp dried oregano
  • 1/4 tsp cinnamon powder
  • A pinch of cayenne powder
  • A pinch of freshly grated nutmeg
  • 2 bell peppers cubed
  • 350 g roasted pumpkin cubed
  • 1 small can whole mushrooms drain
  • 1 can 6 blend beans drain
  • 1 can corn kernels drain
  • 1 tin tomato paste
  • 1 tin water using tomato paste tin
  • 1/4 c bbq sauce
  • 900 ml beef broth
  • 1/2 c packed mashed roasted pumpkin
  • 1 tbsp coconut palm sugar/brown sugar

Instructions

  • Heat oil, saute garlic onion
  • Stir in beef, brown, add in spices
  • Stir in bell pepper and the rest
  • Bring to fully boil, 5 mins
  • Lower temp and cook for another 20-25 mins, til thicken

I love that this chili has cubed roasted pumpkin, so that I can bite into the chunks, but if you are using canned pumpkin puree, just use 1/2 c of puree.
