The ground beef (Beaf) filling is using TVP – texturized vegetable protein. If you are in Canada, they are available at Bulk Barn 😉
Buns:
1 1/4 c almond milk
2 tbsp sugar
1 heaping tsp active dry yeast
In a heatproof bowl, pour milk and sprinkle with sugar. Microwave to lukewarm, then sprinkle with yeast, stir. Let stand for 10 mins
In a separate bowl, mix 3 c flour with 2 tbsp soy milk powder (optional), 1 tbsp icing sugar and a pinch of salt.
Pour yeast mixture into flour mixture and knead
Cover with cling wrap and let stand for an H or until doubled in size
Once doubled, take about 35-45 g dough, flatten and fill (see recipe below), top with green onion sliced, seam to seal
Let rest for another half H
Meanwhile, preheat steamer
Steam buns for 5 mins
Filling:
2 tbsp sliced onion
1 tbsp cooking oil
3 mushroom buttons, chopped
2 tbsp dehydrated veggies, soaked in hot boiling water to soften, drain
1/2 c TVP, soaked in hot boiling water for 2 mins
Maggi liquid seasoning to taste
1 tsp cumin powder
1 tsp paprika powder
1 tbsp hoisin sauce
Vegeta powder to taste
Heat oil, saute onion and mushrooms
Add in the rest, adjust seasoning
Enjoy!

- 2 tbsp dehydrated veggies soaked in hot boiling water to soften, drain
