Egg Hunting In The Mud – Brownies

An easy brownies that I made using Easter chocolate eggs.

This is actually my go- to Rocky Road Brownies but since this was for Easter party, I tweaked the recipe. I knew the chocolate eggs would melt while baking, thus I came with the name on the title box, Egg Hunting In The Mud Brownies. Genius right? hahaha

These brownies are super chocolatey and one slice isn’t enough, in my opinion 😀 But that’s just me, maybe, as I am a big fan of brownies 😀

You can slice them squares obviously, but this time I cut them using a cookie cutter 🙂

Ingredients

  • 3 potatoes, skinned, boiled, mashed
  • 3 squares Baker’s milk chocolate
  • 3/4 cup of butter
  • 3/4 cup of granulated sugar
  • 1/2 tbsp of vanilla essence
  • a pinch of salt
  • 4 whole eggs, beaten
  • 1 c of flour
  • 1 small bag mini MnMs
  • 2 handful regular size MnMs
  • 3 small bags of mini chocolate eggs
  • 2 handful regular size chocolate eggs

Method

  • Preheat oven to 350 F
  • Melt chocolate squares and butter on low heat, take off from heat, let stand for 15 minutes
  • Add in beaten eggs, vanilla, salt, mix well, followed with mashed potatoes
  • Stir in flour
  • Pour batter into parchment lined pan and top with chopped chocolates and chocolate eggs
  • Bake for 20-25 minutes and slice once cooled to room temperature

Packing these babies for my son’s class party 😀
