My husband’s late grandmother loved making us these. Hers were always perfection.
Cottage cheese in Canada is very different than the one in Hungary. Theirs is rather dry.
For the filling below, I used cream cheese, as I didnt bother to get cottage cheese in this rainy day
Dough
320 ml lukewarm water
30 g fresh yeast
2 tbsp sugar
(mix all and let stand until bloomed)
6 c AP flour
5 tbsp sugar
1 tsp salt
1 egg
80 g butter, melted
1/4 c additional milk (original recipe doesnt use this, but I found my dough wasnt perfect still, so I added this)
Filling
250 g cream cheese
1/3 c sultanas, soaked in enough vanilla essence and heated in the microwave for 10 secs
1 tbsp lemon juice
3 tbsp sugar
1 yolk
(mix everything. I found mixture a bit runny, so I added 2 tbsp corn starch)
1 egg, beaten
Icing sugar for sprinkling
Mix flour, sugar, salt, make a well. Add in egg and yeast mixture, knead
Add in butter knead
Add in additional milk, knead until elastic
Let stand an hour til doubled in size
Now, grandmother roll them to rectangular and slice them to make squares. For me, I just grabbed amount of dough, roll and slice squares, one by one (dough is big, am too lazy to roll in big size lol)
Fill and pull each side to middle and pinch, let rest for 25 mins
Preheat oven 350, brush each parcel with beaten egg, bake for 25 mins
Let cool on rack, sprinkle with icing sugar
