Clear Spinach Soup
2 cup of spinach leaves & stems, wash.
1 zucchini, cut in bite size
2 cloves of small shallot, slice thinly
1 cloves of garlic, slice thinly
1 table spoon of shredded Chinese Keys
In a pot boil some water, about 3 cup. When it is boiled, add chopped shallot, garlic and chinese keys. Stir it well.
Add some salt and sugar to taste. Add zuchini and continue to cook for 5 minutes or until tender and almost transparant.
At last add the spinach and boil for another 1 minutes (do not overcooked).
