Monday is here again. Looks cloudy outside, but the good news is, day light is longer now. Around 6 AM sky is brighter, and 5 PM sky is still brighter. Soon hopefully will be bye-bye Winter 😁 I know, I know. For us in the North, Winter stays until May, but still, longer daytime brings a good feeling 😊
For today’s recipe, it’s done in crockpot, which obviously in Indonesia it is made on stovetop instead. So yeah, Indonesian food, Canadian way 😊

1/2 of a large yam
1/2 of a large sweet potato
1 cassava
2 ripe plantains
1 pandan leaf
A thumb of ginger
1 can coconut milk
3/4 can water
1/4 c coconut sugar
1/4 c sugar
1/4 c dark brown sugar
A pinch of salt
Peel and slice all the roots, give a quick rinse. Drop them into crockpot
Add in the rest of the ingredients, except plantain
Stir to mix, and cook for 3 H on LOW
At 2 1/2 H mark, then add in sliced plantain
Easy peasy 🙂
Kolak Pisang
Ingredients
