Love making baked stuffed potatoes. Filling and yummy. You can add anything you like for the filling and flavoring, you can top with tons of cheese, bacon bits, or whatever you fancy 😀

Large potatoes (I used 6 large baking potatoes )
ground red pepper, for sprinkle
1-2 tbsp salted margarine for the potatoes (or more if needed)
1 1/2 tbsp sour cream (as needed)
salt and pepper to taste
1 long carrot, peeled, washed, then cut into small cubes
1 medium beef patties
1 tbsp margarine for saute
a dash of steak seasoning
- In a bowl, pour some warm or hot water and leave the potatoes in for about 3 minutes. Scrub potatoes and pat dry.
- Bake in a 350? oven for 45 to 50 minutes or until cooked through and tender.
- Cut potatoes in half lengthwise; scoop out pulp and mash.
- Beat in butter, sour cream, salt and pepper. Set aside.
- Meanwhile, heat margarine in a pan and cook beef patties and carrot until well done. Add dash of steak seasoning and pepper.
- Pour the cooked beef into the mashed potatoes and mixed well.
- Scoop about tbsp of potato mixture back into potatoes shells.
- Sprinkle with ground red pepper.
- Bake in a 425F oven for about 15 minutes or until potatoes are heated through.
