In a bowl, pour some warm or hot water and leave the potatoes in for about 3 minutes. Scrub potatoes and pat dry.
Bake in a 350F oven for 45 to 50 minutes or until cooked through and tender.
Cut potatoes in half lengthwise; scoop out pulp and mash.
Beat in butter, sour cream, salt and pepper. Set aside.
Meanwhile, heat margarine in a pan and cook beef patties and carrot until well done. Add dash of steak seasoning and pepper.
Pour the cooked beef into the mashed potatoes and mixed well.
Scoop about tbsp of potato mixture back into potatoes shells.
Sprinkle with ground red pepper.
Bake in a 425F oven for about 15 minutes or until potatoes are heated through.
