Did you go for Easter egg hunt? I miss those days when the boys were still babies. Easter egg hunts were always fun, either in the backyard, at friend’s, or at community place(s). Lots of chocolates eggs (for this momma 🙉🙊🙈).
Anyways!
For today’s recipe, saw a lot of colorful cookies at Walmart, so copycat time 😊 If you like those soft Lofthouse cookies, maybe you will like this recipe 😊

1/2 c unsalted butter
3/4 c sugar
1 egg
2 tsp vanilla essence
1/4 tsp almond oil
1/2 c sour cream
2 3/4 c flour
1 tsp BP
1 tbsp cornstarch
1/2 tsp BSoda
1/2 tsp salt
1/2 c unsalted butter
1 c icing sugar
1-2 tbsp milk
Almond oil to taste
In a bowl, mix dry ingredients, set to side
Cream butter and sugar, then crack in egg, followed with vanilla essence and almond oil (or extract). Mix in sour cream
Mix dry and wet ingredients, until it forms a nice dough, then chill dough in the fridge for one hour
Scoop dough and shape into rounds or balls, then flatten slightly
Bake cookies for 9-11 minutes on preheated 350 F
Cool cookies completely then frost
To make the frosting, cream butter and icing sugar, and milk as needed. Flavor the frosting with almond oil.
