Cranberry Snickerdoodle

Ingredients

Dry Ingredients

  • 2 3/4 c flour
  • 1 tsp cream of tartar
  • 1 tsp BSoda
  • 1/2 tsp salt
  • 1 c dried cranberries
  • 2 mandarin skin peel

Sugar Rolling

  • 1/4 c sugar
  • 1/2 tsp cinnamon powder
  • 1/2 tsp allspice powder

Wet Ingredients

  • 1 c unsalted butter
  • 1 1/4 c sugar
  • 1 egg
  • 1 yolk
  • 1 tsp vanilla
  • A couple drops almond oil

Instructions

  • Mix dry ingredients in a ball, set to side
  • Mix dried cranberries and grated mandarin peel, set aside
  • Mix sugar, cinnamon powder and allspice powder, set to side
  • Cream butter and sugar for 2-3 minutes, then mix in egg, egg yolk, vanilla essence and almond oil, until just combined
  • Mix dry ingredients into wet, but do not overmix, then fold in cranberry mixture. Chill dough for 30 minutes
  • Scoop dough per 2 tbsp, shape into round, and roll it into sugar coating
  • Bake cookies for 10-12 minutes, on preheated 400 F
  • Let cookies stand on tray for 5 minutes before cooling them on rack
