I have a nice teacake or tea bread loaf to share today, kids and husamband approved.
So simple to prepare, yet delicious. It stays good for a week long either in the fridge or room temperature (but here is Winter though!)
Give this recipe a try and see if you like it too 😊

2 bags earl grey tea
1/2 c hot boiling water
1 tsp honey
1/2 c dried cranberries
1 3/4 c flour
1 tsp BP
1/2 tsp BSoda
A pinch of salt
1 tsp grated lemon peel
2 eggs
3/4 c sugar
1/2 c sour cream
1/3 c vegetable oil
1 tsp vanilla essence
Soak the tea in hot water, then soak in cranberries, adding honey if you like
Mix dry ingredients in a bowl with lemon peel
Cream eggs and sugar, add in sour cream, oil, and vanilla essence
Add in dry ingredients in batches, do not overmix, then pour in cranberries with tea liquid. Again, do not overmix
Bake on preheated 350 F 45-55 minutes. Let stand 10 minutes, then take out tea-bread from the pan, and cool on cooling rack
Earl Grey Cranberry Tea Loaf
