Earl Grey Cranberry Tea Loaf

Ingredients

  • 2 bags earl grey tea
  • 1/2 c hot boiling water
  • 1 tsp honey
  • 1/2 c dried cranberries
  • 1 3/4 c flour
  • 1 tsp BP
  • 1/2 tsp BSoda
  • A pinch of salt
  • 1 tsp grated lemon peel
  • 2 eggs
  • 3/4 c sugar
  • 1/2 c sour cream
  • 1/3 c vegetable oil
  • 1 tsp vanilla essence

Instructions

  • Soak the tea in hot water, then soak in cranberries, adding honey if you like
  • Mix dry ingredients in a bowl with lemon peel
  • Cream eggs and sugar, add in sour cream, oil, and vanilla essence
  • Add in dry ingredients in batches, do not overmix, then pour in cranberries with tea liquid. Again, do not overmix
  • Bake on preheated 350 F 45-55 minutes. Let stand 10 minutes, then take out tea-bread from the pan, and cool on cooling rack
