Today is so foggy. I woke up at 4 AM and was surprised when I looked outside the window. Then at 8.30 I had to drive to town, even foggier. It is only 12 C tho. Chilly since yesterday. Wet and cloudy, just like yesterday. I wonder if it’s gonna be warmer later on. It’s supposed to, according to weather sites, but those predictions are often way off. So idk 😁
I am planning to just relax today. I’ve prepared meals for the rest of the week. We had long weekends, so I made beef stew and rhubarb pastry, my husband made pot roast and also chicken soup, and we also steamed taro and potatoes. Yup, food prep is always fun for lazy person a.k.a me 😁 1 whole day tiring myself, and the rest of the week just to nap, nap, and prepare fresh salad, and nap some more 🤣
Today I am sharing these following steamed buns recipe. In Indonesia we call them as Bakpao. They are filled with sweetened grated coconut, my youngest’s favorite 😊
1 1/4 c lukewarm water
2 tbsp sugar
2 tsp active drive yeast
1 tsp pandan paste
3 c flour
2 tbsp sugar
A pinch of salt
1 bag unsweetened desiccated coconut
1/2 c water
1 c dark brown sugar
1 pandan leaf, knotted
1/2 tsp salt
Bloom yeast 10 mins, stir in paste
In a bowl, mix flour, sugar, salt, make a well in center, pour in yeast, knead
Cover with cling wrap, let rest for 1 H
Meanwhile, mix coconut, water, sugar, salt, and pandan on a pan, cook until coconut softened and sugar dissolved. Cool to room temperature.
Divide dough into portions. Flatten each portion and place filling in center, shape into rounds.
Preheat steamer
Steam buns for 15 mins
