It’s a beautiful morning at the moment, and I don’t have any plans! Not for gardening, not for cleaning house. Maybe I will bake cookies 😁 Been home for 2 months now, I dont think I wanna go back to workforce anymore 🤣🤣🤣🤣 I’m finding my groove again, as a housemaker. I said to my husband just yesterday, why the hell did I ever want to go to work. I liked staying home as a mom and a wife 🤣 Lazy ass is me 🤣😅🤣😅 I MUST find a new job and go to work again. Bills and taxes don’t pay themselves. Boo-hoo. And to complete my Fairies collection! I need $$$. I have expensive hobbies. Plants and fairies 🤣 Oh rats. Fine, I will apply for jobs then 😅But meanwhile, let me breath in and enjoy this time off, and bake as much as I could 😁
Here is my favorite pancake. Combination of my 2 favorite goodness. Coconut and chocolate chips 😍
1 1/2 c flour
3 tsp BP
2 tbsp sugar
A pinch of salt
2 tbsp unsweetened desiccated coconut
1/2 c semisweet choc chips
1/4 c of unsalted butter, melt
1 c milk
3 tbsp plain Greek yogurt
1 egg
1/2 tbsp vanilla essence
Mix flour, BP, sugar, salt, coconut and choc chips in a bowl, and make a well in center
Add in yogurt, crack in an egg, pour in milk, melted butter and essence. Mix all until just combined
Using pancake maker (you can use stove top pan), drop by 1/2 c to 3/4 c and cook according to the manufacturer
Enjoy as is or with your favorite syrup 😋😋😋😋
