How’s life treating you this 2023 so far? Goddamn recession is catching up on us, Canadians. Left and right, factories are closing permanently. So sad. So many people out of jobs. Yes, I know, giant companies such as Amazon, Fb, Google, etc letting go thousands too, but never occurred in my mind, for something that is so close to home would be so bad as well….like the place I work at, at the moment ?
Anyhoo!
The other weekend, we celebrated my oldest birthday. It was a Champagne birthday, and I baked him the following cake.
He loves cherry pie filling, be it on baked goods or to eat it as is ? He also prefers cheesecake than buttercream cake most of the time. So, ta-daaaaaa!
Blackforest Cheesecake it was for him ?

Crust
2 sleeves of Oreo cookies (or chocolate Graham/other dark, chocolate flavor, cookies)
1/4 – 1/2 c unsalted butter
Cheesecake Batter
2 blocks cream cheese
1/2 c sugar
1/2 tsp vanilla essence
2 eggs
Additional (Filling)
1 can cherry pie filling
Topping
1/2 c semisweet chocolate chips
1/4 c hot boiling water
Additional (Topping)
Sweet whipped cream
Chocolate pieces
Crush cookies then mix with melted butter. Press firmly on springform pan.
Cream sugar and cream cheese, beat in essence, until smooth, then beat in eggs, until just combined.
Pour 1 c of batter onto crush, spread evenly
Top with cherry pie filling, then pour the rest of the batter.
Bake cheesecake at preheated 325 F until center is somewhat set (40 mins). Cool to room temperature completely before chilling in the fridge over night.
Take out cheesecake from fridge, set aside. Now let’s make the topping. In a bowl, pour hot boiling water onto chocolate chips, stir to melt. Pour onto cheesecake. It will set almost within minutes.
Garnish with whipped cream, decorated with chocolate pieces, slice and serve. Yummo!
