Dark Cherries Pie Bites

Do you like pie as much as I do? I love pie so very much. Most of the time I prefer a slice of pie rather than a slice of cake! 😀 For my birthday usually my husband knows better, he will come home with a pie, any kinds of pie, I truly like any kinds, as long as they are sweet, although I love meat pie as well. Well, not “mud pie” though hahaha

The other day I was making a pie to send away and I had a leftover pie dough/crust, and I turned them into pie bites and I filled them with dark cherries.

Obviously you don’t have to include the cherries stems like I did, they were just for aesthetic hahaha

Ingredients

1 1/2 c flour
A pinch of salt
1 tbsp sugar
1/2 c unsalted butter, cold
1/4 c sweetened almond milk

Filling:

Pitted dark cherries
Sugar

Method

  • Mix with hand ingredients for skin. Divide into portions (big enough to cover a cherry)
  • Flatten dough place 1 cherry in the middle, sprinkle cherry with a little sugar. Shape into a ball.
  • Preheat oven to 375 F
  • Dissolve 1 tbsp brown sugar with a little aquafaba (bean water)
  • Brush this solution on pie bites
  • Bake pie bites for 25 mins, cool on rack
  • Serve warm is best, but they are good in room tempt too
