1/2 c butter/margarine
1/2 c sugar
1 egg, lightly beaten
1 tbsp vanilla essence+water
1 medium large banana, pureed
1 1/2 c grated zucchini
1 1/2 c AP flour
1/2 tsp bsoda
1/2 tsp cinnamon powder
1/2 tsp allspice powder
2 c quick oats
1/4 c raisins
Preheat oven 350 F
Soak raisins in 1 tbsp vanilla essence+water enough to just cover the raisins, set aside
Cream margarine+sugar until fluffly with mixer, turn it off
Add in egg and vanilla essence mixture from the soaked raisins, stir to combine
Add in zucchini, stir to combine then pour in pureed banana, stir to combine
Mix flour, allspice, cinnamon and soda, add into zucchini, stir to combine well
Add in oats and raisins, stir well
Drop by tablespoon, bake for 10 mins, and leave on tray for 2 mins before placing on cookie rack to cool
Original recipe doesnt use banana, uses more sugar, no raisins (but choc chips) nor allspice. Drop by teaspoon to make 4 dozens.
I just wanted something a bit healthier that’s why banana and raisins are in (and less sugar, it’s sweet already)! If I had carrot, that would go it too :)))
