Love satay. One thing I always miss is satay vendors. In Canada, there are Thai/Vietnamese style satay at restaurants, but they just don’t cut it for me. Indonesian satay are most of them time served with peanut sauce, and that what makes it special to me hahaha
This is a cheater version though a.k.a using peanut butter instead fresh fried peanuts 😛
If you are using bamboo skewers for your satay, do soak them totally wet for at least 30 minutes, longer is better
Satay
800 g beef cubes
50 ml coconut milk (I love Toscana brand, their quality is good)
5 tbsp coconut milk
Spice Paste:
1 tsp cayenne powder mixed with 1 tsp paprika powder
1 tbsp sugar
1 large onion
a pinch or two salt
1 tbsp coriander seeds and 1 tsp cumin (dry fry until fragrant – frying without oil/grease)
Process spice paste ingredients using food processor/mortar and pestle until smooth
Mix spice paste with beef cubes and 50 ml coconut milk
Chill in the fridge for at least 2 h
Take out from fridge, mix in the 5 tbsp coconut milk, then thread cubes in skewers
Grill/broil satay until cooked (under broiler in oven would take about 30 minutes, turning once or twice)
Serve with peanut sauce and warm rice
Peanut Sauce
(bring to boil, stirring continuously until thicken):
5 tbsp peanut butter, smooth
200 ml coconut milk
1 tbsp minced garlic (store bought)
2 tbsp ketchup
1 tbsp Sriracha sauce
1 tbsp sugar
salt to taste
Serving Suggestion:
Lime/lemon wedges or bottled lime/lemon juice
Spicy sweet soy sauce (a mixture of sweet soy sauce with sliced fresh bird eye chilies and shallots –> about 8 bird eye chilies, 5 shallots and 5 tbsp sweet soy sauce, Indonesian brand preferably called ABC, available at Asian stores) – pictured.
