Shrimp Fried Noodle (Low Carb For Ketogenic)

Still thinking what to have for lunch? What about a nice plate of fried noodle?

I made a plate of fried noodle using low-carb fried noodle, which of course you can use regular egg noodle, rice noodle, whatever noodle you like 😀

I included the carb calculation if you are doing keto diet, so you won’t exceed your macros 😀

I always recommend shirataki noodle to those doing keto. You can add it in soup, stir fry, and of course fried noodle. With shirataki noodle you can still have your favorite (Chinese) food with much less carb 😀

Ingredients

  • 1 package House Foods Tofu Shirataki, spaghetti shaped noodle substitute (3 gram carb), drain, rinse
  • 1/4 of 1 block medium-firm tofu (0 gram carb), cubed –> Sunrise brand
  • 1 small-medium onion
  • 1-2 heaping tsp store bought minced garlic
  • ground white pepper to taste (I added quite plenty as I like spicy food)
  • 10 cooked shrimps (medium-big size), tail intact
  • 2 tsp olive oil (0 gram carb)
  • Hungarian Vegeta seasoning (or you can substitute it with Royco/Masako or soup base), as needed
  • a squirt or two of store bought lime juice
  • 1/2-1 tbsp salsa smokey chipotle from President Choice (slightly less than 1 gram of carb)
  • 1 green onion, slice thinly
  • Cucumber(optional)

Method

  • In food processor, make paste of garlic and onion, add in the ground white pepper
  • Heat olive oil, fry cubed tofu until golden brown
  • Add in paste, stir lightly to coat tofu
  • Add in shrimps, noodle, and the rest of the ingredients; stir well
  • Cook for another 2-3 minutes; then add in green onion, stir, place on serving plate
  • Serve immediately, accompanied with sliced cucumber
