These are wonderful. You can subs orange with lemon and they will be lemon bars 😉 Goes the same with mandarin!

16 tbsps margarine
1/2 cup icing sugar
1 tsp vanilla extract
a dash of vanilla sugar
2 cups all-purpose flour
4 large eggs
1 1/2 cup sugar
grated orange rind from 1 medium sweet orange
fresh sweet orange juice from 1/2 orange
icing sugar, for topping
First preheat the oven to 350 F. Grease a baking pan and set aside.

Combine margarine, icing sugar, vanilla sugar, and vanilla extract in a mixing bowl, beat until fluffy in a medium speed.

Lower mixer speed, add in flour bits by bits, mix well. Spread batter in greased pan and bake for 18-20 minutes.

Meanwhile, combine eggs, sugar, orange rind and orange juice, stir to blend with spatula or wooden spoon, do NOT beat.
