Pepes is normally wrapped and cooked in banana leaves, which I did not get the chance to go shopping for it, so I used aluminum foil instead hahaha Yep, when you live outside Indonesia, you make do with whatever is available to you 😀

2-3 chicken breasts, boned, skinned
2/3 packge of Munik’ Specially Roasted Fish Seasoning
1 1/2 tbsp sweet soya sauce, I used Indonesian ABC
3/4 cup frozen mixed veggies, thawed (green beans, corn, carrot)
2 green onions, sliced
5-7 leaves of Thai Basil (optional)
- Cut chicken into 4 pieces each, wash clean
- In a bowl, mix all ingredients well, leave it for about 20 minutes or more.
- Wrapp chicken in aluminium foil and bake in 375 F until chicken well baked (1 hour or so)
- Serves warm with warm seasoned rice and stuffed olives.
