Very Easy Almond Muffins

Since I woke up I’ve been bored and just not feeling too good with the humidity outside. I went to the kitchen to see what would cool me, then I remembered something. So I sent a quick short e-mail to my husband at work and asked whether that day was his mother sweet diet day. I twisted my mind around to find a new cooking for her and I came to create this recipe. Its easy, light, and very quick in baking!

Ingredients

1/2 cup of almond, grounded in blender to a coarse flour
1/2 cup all-purpose flour
2 tablespoons of baking powder
1/2 cup milk, warmed
1 teaspoon vanilla extract (or almond extract if you prefer strong taste)
1 pinch of salt
1/4 cup sugar
2 tablespoons unsalted butter, melted and cooled
1 Egg

Directions

  • Preheat oven to 350F.
  • Combine almond, flour, baking powder and sugar. Add egg, butter, milk, vanilla, salt. To make sure everything blended well, use mixer for about 1-2 minutes
  • Fill 4 cups of a nonstick muffin pan (or regular muffin pan with paper liners) with the batter.
  • Bake 8 to 10 minutes, until a toothpick inserted in the center comes out clean.

Suatu hari di musim panas, cuacanya ga ketulungan bo! Bikin pusiaaaaanng hahaha Saking ga ada kerjaan, padahal panas gitu, malah ke dapur bikin kue 😀

Dicoba deh ini resep, lumayan enak meski asal campur ini itu, menyesuaikan bahan di dapur hihihih

Bahan-bahan

1/2 c kacang almond, haluskan menjadi bubuk
1/2 c tepung terigu
2 sdm baking powder (Bakpuder)
1/2 c susu cair, hangatkan suam-suam kuku
1 sdt esens vanila/kacang almond
sejumput garam
1 butir telur
2 sdm mentega, lelehkan, dinginkan suhu ruangan

Cara Membuat

  • Panaskan oven 350 F
  • Campurkan bahan kering, masukkan bahan basah, kocok rata
  • Tuang pada cetakan kue muffin/cupcake
  • Panggang 8-10 menit

Jadi deh 😀
