Hope your weekend was nice. Mine was great. After walking limping for some days, I could finally walk straight and fast yesterday. Bending and squatting is still another story tho. Meh. Moral of the story, don’t injure yourself at work, at home, at wherever, just don’t 😅
For today’s recipe, the chicken is great to shred and serve it as rice bowl, or as is with rice and salad, even just with sliced cucumbers. Almost tasting like satay 😊

6 chicken breast, skinless, boneless
1 c less sodium hicken broth
5 tbsp smooth peanut butter
1/2 small onion
3 garlic
garlic powder to taste
1 thumb ginger
generous pinch ginger powder
2 tbsp dark brown sugar
2 tbsp less sodium soy sauce
I have been making food that are easy to make, a.k.a lazy mom version, where one can just dump all in the breadmaker machine or crockpot or InstantPot, as life has been sooooo exhausting, but mommy duties keep going, you know hahahah So…yeah, if you are looking for cooking adventure, you definitely won’t find it here these days 😛 That being said, here is a dump and leave dish but my gosh yummo, especially if you like peanut sauce, just like Indonesian chicken satay with bumbu kacang 🙂
Slow Cooker Peanut Butter Chicken
Ingredients
- 6 chicken breast skinless, boneless
- 1 c less sodium hicken broth
- 5 tbsp smooth peanut butter
- 1/2 small onion
- 3 garlic
- garlic powder to taste
- 1 thumb ginger
- generous pinch ginger powder
- 2 tbsp dark brown sugar
- 2 tbsp less sodium soy sauce
Instructions
- Dump and mix ingredients in slow cooker
- Set slow cooker for low and cook for 4-6 H
