Ramadan is almost over. Time to bake cookies π I will be traveling for Eid thoβ¦.hospital visits. JOY π€£ That being said, this year Ramadan (and Eid) for my household is meh, unlike last year, but cest la vie π
Anyhoo! If you like spicy food, try this Ayam Woku Belanga recipe π It is from Manado, Indonesia, and as always made in Canadian kitchen, so crockpot all the way π

2 lemongrass
1 onion
1 tomato
A handful Cherry tomatoes
3-6 bird eye chilies
8 garlic
2 tbsp oil
1/2 tsp ginger powder
1/4 tsp turmeric powder
1 whole chicken (1.6 kg)
4 kafir lime leaves
1 c water or chicken broth
Salt and white pepper to taste
Indonesian basil (kemangi), use Thai if not lemon as subs
Place lemongrass on slow cooker, then top them with chicken. Add kafir lime leaves
In food processor, mix onion, tomatoes, chilies and the rest of the ingredients, except water and basils
Pour paste onto pan and saute until fragrant and bubbly, then pour paste into slow cooker, season with salt and white pepper to taste. Add in water if not broth. Cook chicken on low setting for 6-8 H (or high for 5-7 H)
30 minutes before turning off the slow cooker, add basils and continue cooking
Enjoy with warm rice!
