Growing up, my mom would make all sorts of fuyunghai (Indonesian style of egg foo young). She would add crabmeat, or just green onions, depending the money situation in the house 😛 Other times in fact, just the egg omelet with the sauce, is enough for us 🙂
In Canada, I see a lot of imitation crabmeat made of fish actually. They are normally to be used for sushi making. This time, I used it in my fuyunghai hahaha
2 cups thinly sliced crabmeat imitation
2 green onion, sliced
3 cloves of garlic, crushed
a dash of salt
4 tbsp of vegetable oil
sauce: 2 cloves of garlic, crushed; ketchup; vinegar; sugar; 1-2 tbsps of vegetable oil
a dash of ground white pepper
8 eggs
1small onion, chopped

For Omelet:
- Combine crabmeat, eggs, onion, green onion, salt and mix well with egg beater.
- Heat the oil in a wide pan, make a thick omelet out of the mixture.
For Sauce:
- Heat oil in a pan, saute garlic, then pour ketchup, vinegar and sugar as desired (reached the sweet and sour taste)
For Servings:
- Place omelet on a plate and pour the sauce all over it
