I know what I want to get from Indonesia in the future, yeast! To ferment rice, glutinous rice, and cassava. We have this delicacy that we called Tape (other spelling is Tapai). Soooo good.
Now for this following pudding, I used fermented rice. Wow, how did you do it? (make the fermented rice) that was the first comment from my husband. Later on, teh Irma, my friend, said the same. hehehehe I didnt! I bought them. It was the first and my last time that I ever saw ‘Tape Ketan’ at Man Phong. The Chinese store in China town that I often go to.
Smells and tastes good was the 2nd comments from my husband when he tried this. It’s actually nothing. But since he never tried such pudding before, to him it’s something heheh.
Because I didnt find black or green rice fermented, and I wanted to make ‘green rice fermented’ pudding, I just added food colour in it. So voila hahahha

1-2 drops of green food coloring
1 cup water
a dash of salt
4 tbsps sugar + 4 tsps sugar
1 plain jelly powder (I used Indonesian agar-agar Swallow)
300 ml coconut milk
2-3 tbsp of white fermented rice (tape ketan)
1 tsp of vanilla sugar
- In a pan, mix all ingredients as one but not the fermented rice, then bring to a boil.
- Meanwhile, spread the white fermented rice on the bottom of the pudding dish.
- When the mixture boiled, pour over the baking dish and set until firm in the fridge. Serve chill.
Puding Tape Ketan
Ingredients
- 1-2 drops of green food coloring
- 1 cup water
- a dash of salt

- 1 tsp of vanilla sugar
Instructions

- Meanwhile, spread the white fermented rice on the bottom of the pudding dish.
- When the mixture boiled, pour over the baking dish and set until firm in the fridge. Serve chill.
