Another smoggy morning here in BC, Canada. My heart goes out to those who are evacuated, to those who are affected, and to the firemen as well. Crazy time for everyone, it has become an annual occurrence now, wildfires and abundant worries 😟
I had to puff myself twice yesterday. My chest was in pain, couldn’t breath freely, due to the smokey air 😕 Later around 6 PM I could finally go out to the backyard to water my plants. In the morning and throughout the day, I had to calm down my breathing after being out for a mere 5 mins. Crazy smoggy day, it was the school even had an inside day 😵💫 Today is smoggy as well, but less smokey smell in the air, and kids are outside, so that’s a good sign. Maybe I don’t need to puff myself today, hopefully!
Back to recipe sharing. A simple stir fry that everyone like in this house 😊

1/2 large onion, thinly sliced
4 garlic, thinly sliced
2 tbsp unsalted butter
6 bell peppers, rinsed, seeds removed, sliced
2 bags frozen shrimps, rinsed (600 g in total)
3 red bird eye chilies
Sesame oil, to taste
Chicken bouillon powder, to taste
Saute onion and garlic in butter for 2 mins, on low medium heat, until softened and fragrant, then add in sliced bell peppers. Stir fry for 3-5 mins, until bell peppers softened, covered, stirring occasionally
Add in quickly rinsed frozen shrimps. Stir fry for 5-8 mins, until shrimps turn pinkish
Stir in red bird eye chilies, then season with sesame oil and chicken bouillon powder
Serve immediately with warm rice
