Tuesday here and it’s going to be a short week for the kids. Friday they will have a day off. Nice 😁 I feel in Canada, or at least in British Columbia, there are often no school days. Wish I had that growing up 🤣
I baked banana muffins yesterday. Dropped off the boys to school, got home, and right away baking. I felt like it was a muffin day yesterday. Today, maybe I will make clafoutis, I don’t know yet 😁
This following isn’t overly sweet, it’s just perfect. That being said, if you like sweeter muffin, once you checked the ingredients, by all means add more sugar to the mixture 😊

2 ripe bananas
2 eggs
1 c milk
1 cap vanilla essence
1/4 c dark brown sugar
1/4 c sugar
1/4 c ghee
2 c flour
2 tbsp minute oats
1 tsp allspice powder, or to taste
1 tsp cinnamon powder, or to taste
1 tbsp cocoa powder
1 tbsp BP
Minute oats for topping
In a bowl, mix flour, oats, spices, cocoa powder and baking powder, set to side
Preheat oven to 400 F
In a food processor, mix bananas, eggs, milk, essence, ghee, and sugars. Pour into dry ingredients, mix until just combined
Divide into 6 muffins per 1/2 c and top with minute oats
Bake for 20 minutes and move them to cooling rack
Enjoy!
