Have you heard or tried Palinka? It’s Hungarian liquor that is sooo awful …. NOT – when I 1st tried it, of course, I totally found it to be awful. Looked harmful and delicious as it was totally clear, just like water
Then a big sip, holy cow! STRONG!
I liked it better with ice and water
That until I found Honey Palinka! Now, this is TRULY delicious!
I even like it more when I used it to make this sorbet

If you cannot find Palinka, don’t fret, you can use Schnapps with similar flavor or even omit it, especially if the sorbet is for kids
1 dragon fruit (makes 2 servings)
at least 4 tbsp Palinka Honey Peach (depending how strong you’d like it to be)
Fresh juice of a lemon
150 ml simple syrup (recipe follows)
Halve a dragon fruit and scoop out the flesh and place it into a blender.
Wash and pat dry the skins, bag them in a ziplock and chill them in the freezer until sorbet is ready to be served.
Pour Palinka, lemon juice and simple syrup into the blender, process for 1-2 minuets (mixture will turn white as shown on picture).
Pour mixture into a container and freeze for 3 H.

Take out container from freezer and dump sorbet into blender and process again for another 2 minutes.
Pour back mixture into container and freeze again for another 3 H.
Repeat step one more time, and after freezing, scoop out sorbet into frozen skin and serve.
Simple Syrup
1 c sugar
1 c water
Bring to a boil while keep stirring, until sugar dissolve. Cool to room temperature.
Dragon Fruit Palinka Sorbet
