My new coworker is from The Philippines and she loves indulging me with Filipino sweets, like this following jam made of ube, their purple yam. She said you can use ube jam in many sweets and baked goods, or eaten as is even.

1 bag grated ube (you can get it from the Filipino store, normally sold frozen)
1 can sweetened condensed milk
1 can evaporated milk
1 tbsp vanilla essence
1 tsp ube flavoring (you can get it from the Filipino store, in small bottle)
1/4 c unsalted butter
Place everything into a pot, cook until thickened to your liking
