Happy Sunday!
On Friday we had ZERO degrees, it was a shock. The next day though, Saturday, it dipped to -10 C, and guess what’s happening for today? Snowing 🫣 Mother nature is funny sometimes. To top that, I started planting my seeds last night. The warm spell really pushed me, and once I got some eager to do it (gardening, planting, and whatnot), for sure Winter say “boo! I’m back” 🤣
Anyhoo!
Here is one of my favorite cookies. Perfect for Winter 😉

1/2 c icing sugar
1 c unsalted butter
2 1/4 c flour
A pinch of salt
1/2 c dried cranberries, chopped
1 tbsp grated lemon peel
2 tsp – 1 tbsp orange juice with pulp
1 cap (1 1/2 tsp) lemon extract
Mix dry ingredients
Cream butter and icing sugar, 5 mins
Add in lemon peel and lemon extract, combine well
Add in dry ingredients a little at a time, until just combined
Mix in dried cranberries, mix well
Shape into log, wrap, and chill at 2 H or overnight, or freeze until ready to be baked
Slice and bake preheated 350 F, 10-12 minutes
Cool on rack before storing
