Cranberry Lemon Cookies

Tart, Sweet, and Perfect For Holidays!

Ingredients

  • 1/2 c icing sugar
  • 1 c unsalted butter
  • 2 1/4 c flour
  • A pinch of salt
  • 1/2 c dried cranberries chopped
  • 1 tbsp grated lemon peel
  • 2 tsp - 1 tbsp orange juice with pulp
  • 1 cap 1 1/2 tsp lemon extract

Instructions

  • Mix dry ingredients
  • Cream butter and icing sugar, 5 mins
  • Add in lemon peel and lemon extract, combine well
  • Add in dry ingredients a little at a time, until just combined
  • Mix in dried cranberries, mix well
  • Shape into log, wrap, and chill at 2 H or overnight, or freeze until ready to be baked
  • Slice and bake preheated 350 F, 10-12 minutes
  • Cool on rack before storing
  • Enjoy!
