Funny story. Yesterday, my husband and 2 boys went to what they thought was gonna be school concert. The school band department been sending back and forth confusing emails. They didn’t have a nice afternoon so to say, and to top that, a driver cut in front of them, super close that they almost had an accident. Crazy afternoon, I should say, for them.
Anyhoo! Try this moist bread. My boys loved it 😍

1 1/2 c flour
1 c unsweetened desiccated coconut, I like the extra fine texture
1 tsp BP
1/2 tap BSoda
1/4 tsp salt
2 eggs
3/4 c sugar
1/2 coconut milk
1/3 c vegetable oil
1 tsp vanilla essence
Mix dry ingredients in a bowl, then set to side
In a bowl, cream eggs and sugar until pale, then whisk in coconut oil that has been mixed with oil and essence
Mix in dry ingredients into wet ingredients, until just combined
Bake tea loaf for 45 minutes on preheated 350 F
Let stand in pan for 10 minutes before cooling it completely on a cooling rack\
