Coconut Tea Loaf

Ingredients

Dry Ingredients

  • 1 1/2 c flour
  • 1 c unsweetened desiccated coconut I like the extra fine texture
  • 1 tsp BP
  • 1/2 tap BSoda
  • 1/4 tsp salt
  • 1 1/2 c flour
  • 1 c unsweetened desiccated coconut I like the extra fine texture
  • 1 tsp BP
  • 1/2 tap BSoda
  • 1/4 tsp salt

Wet Ingredients

  • 2 eggs
  • 3/4 c sugar
  • 1/2 coconut milk
  • 1/3 c vegetable oil
  • 1 tsp vanilla essence

Instructions

  • Mix dry ingredients in a bowl, then set to side
  • In a bowl, cream eggs and sugar until pale, then whisk in coconut oil that has been mixed with oil and essence
  • Mix in dry ingredients into wet ingredients, until just combined
  • Bake tea loaf for 45 minutes on preheated 350 F
  • Let stand in pan for 10 minutes before cooling it completely on a cooling rack
