Yay, no school today, altho this momma was up at 5 AM still, regardless 🤪 Are you like that as well? Isn’t that annoying? I mean, hey, you get a day off from having to prep breakfast early, driving kids to school, you could use the extra time to relax, but nope. Your body and mind has its own agenda 🤣
For today’s recipe, it’s a traditional cake that is normally using rice flour. However, I felt like chewy texture instead soft (slight firm) texture, so I used glutinous rice. It’s Banjarese cake called Amparan Tatak, often comes out only when it’s Ramadan in Balikpapan 😊

1 can of coconut milk
3/4 c sugar
1 tsp vanilla
1/2 tsp salt
1 ripe soft plantain (or Saba banana)
1 c glutinous rice flour
1/2 c flour
In a bowl, mix glutinous rice flour and flour
In a pot, simmer coconut milk, sugar, vanilla, and salt, but do not boil. Let it cool slightly to room temperature
Mash plantain and add it into the pot
Pour mixture into dry ingredients, mix until no lumps
Steam for at least 35 minutes, on medium heat
Cool cake completely before slicing
