Hope your week is off to a good start. Back to school today. Teenagers at home didn’t really wanna get up earlier 😅 I don’t blame them, especially since on the weekend it was snowing nonstop again. My oldest spent quite some times shoveling the porch. He’s tired 😅
My husband will be home alone today. He’s gonna stay home for a lot now since he got laid off a week before Christmas. Kinda heartless I’d say, but c’est la vie, hey. When you work for a corporate, you are expendable regardless been working there for more than a decade.
As for me? I have some shoveling to do today. Darn Winter is breaking my back even more 😅
Here is recipe for today 😊

2 c flour
2 tbsp cocoa powder
1 tbsp BP
A pinch of salt
1 c milk
6 tbsp peanut oil
2 eggs
1/2 c sugar
2 tsp dark brown sugar
2 tsp vanilla essence
Mix dry ingredients in a bowl, set aside
In a food processor, combine eggs, milk, oil, essence, and sugars. Pour mixture into the bowl
Mix ingredients until just combined, then divide into greased muffin pan
Top each muffin batter with mini box of Smarties
Bake muffins on preheated 400 F for 20 minutes
Candy Coated Chocolate Muffins
Ingredients
- 2 c flour

- 1 tbsp BP

- 6 tbsp peanut oil

- 1/2 c sugar
- 2 tsp dark brown sugar
- 2 tsp vanilla essence
Instructions
- Mix dry ingredients in a bowl, set aside

- Mix ingredients until just combined, then divide into greased muffin pan
- Top each muffin batter with mini box of Smarties
- Bake muffins on prehetaed 400 F for 20 minutes
