We are back to gloomy, expecting thunderstorm, day. Meh. My son and husband will be volunteering at an Air Show event today. I am crossing my fingers the weather won’t be so bad for them 😵💫
Went into the greenhouse 10 mins ago, to see whether I need to officiate any of my zucchini or pumpkin. Only 1 zucchini. I did see that I have to harvest 4 of them later if not tomorrow. I like the sizes already, but am gonna grate them, perhaps, and for that, bigger sizes would be better.
Speaking of zucchini. This following recipe is superb for breakfast, brunch, lunch or whenever 😊

2 zucchini
5 eggs
1/3 c extra light tasting olive oil
2 heaping tsp chicken bouillon powder
1 c grated cheese
1 – 1 1/4 c flour
1 tsp BP
1 bag turkey bacon
1 large onion
Wash and grate zucchini
Slice bacon, you can obviously use chicken bacon, real bacon. You can slice, dice, or even chop the bacon
Mix flour and baking powder
Dice, chop, or turn onion into a paste using food processor
In a large bowl, beat eggs with oil and bouillon powder to combine well, stir in onion paste.
Add in grated zucchini, flour mixture, grated cheese and bacon. Dump mixture on a rectangular pan and bake for 30-40 minutes on preheated 350 F
Let stand for 3-5 minutes, slice and enjoy!
