Good Morning!
I’ve been busy in the greenhouse sincs 6 AM again. Hand pollinated some zucchini and pumpkin. I have not a good luck with pumpkin this year. They got pollinated, they grew big, then slugs got them, they turned rotten. Other pumpkin grew big, then cracked. Most, small pumpkins just yellowing and wilting even before opening their flowers. Zucchini though, I’ve been harvesting almost every other day, depending the size. I like them smaller size as they are like cucumbers, for that, I can harvest it daily. My husband on the other side, he likes them bigger, like store bought size, and for that, we have to wait a couple of days before I can pick them off 😁
For today’s recipe, I harvested some of the green onion and used them for the filling 😊

500 g beef
1/4 of a medium onion
4 garlic
A handful baby carrots, slice or dice
1 tbsp unsalted butter
80-100 ml water

Celery salt to taste
White pepper powder to taste
Sweet soy sauce to taste
150 ml lukewarm water
1 tbsp sugar
1/2 tsp oil
2 heaping tsp quick rise yeast
600 g flour
2 tbsp sugar
A pinch of salt
50-80 ml water
2-4 green onions, slice thinly
Slice garlic and onion, place on a pan, along with beef, butter, and sliced baby carrots, cook until half way cooked
In a cup, mix water, flour, white pepper, and celery salt, then pour mixture into pan
Cook until water absorbed and beef cooked through, season with sweet soy sauce
Cool completely. This can be prepared the day before.
In a small bowl, mix lukewarm water with sugar and yeast
In a large bowl, mix flour, sugar and salt, then pour in yeast mixture, knead
Pour in additional water, starts from 50 ml, until you form a nice dough
Cover and let rest for an H until doubled in size
Divide into 18 portions, per 50-55 g each
Flatten a dough, fill with beef and green onion, shape into rounds
Let rest filled dough for 15 minutes then steam on preheated steamer for 10-15 minutes
Enjoy!
