Hi Guys!I hope your Saturday is as sunny as ours. Yay, Summer is back lol I was just browsing the news and for a sec there, my heart skipped a beat! Someone in our town won 500K CAD, from last week’s lottery. For a sec there, I was soooo hopeful, crossing my fingers, it was me, until I realized, I never bought any lottery tickets, boo-hoo. lol So…let’s just share a recipe for now I asked my husband to boil me some matpe beans, but I did not really specify how much, so he cooked the whole bag. Of course, waaaaaay too much. It ended up as breakfast, lunch, and dinner
And also, for snack time…which was this following Dal. Sooooo good, believe me
My boys enjoyed it as well, so am happy.
Recipe may seem long, but the end result, is heaven.

- 1/3 c x 4 cooked husk-less split matpe Beans (mashed potato texture)
- 1-2 tbsp olive oil/vegan margarine
- 3/4 tsp cumin powder
- 3/4 tsp coriander powder
- 1/4-1/2 tsp turmeric powder
- 1/2 of a large onion, chopped
- 1 tsp minced garlic, ready to use
- 1/2 tsp minced ginger, ready to use
- A pinch or two cinnamon powder
- 1/2 c vegetable broth
- 1 large tomato, chopped
- Freshly cracked black pepper
- Salt to taste
- Coriander leaves, chopped
- Naan bread, toasted
Into food processor, mix into powder and sift:
- 1 black cardamoms
- 3 cloves
- A small piece of nutmeg
How To
- Dry-fry spices, set aside (dry fry: frying without oil, like toasting on pan)
- Heat oil, saute onion and garlic followed with ginger
- Stir in fried spices and matpe Beans
- Pour broth
- Add in chopped tomato
- Season
- Serve sprinkled with chopped coriander and naan chips
- Enjoy!
