Matpe Beans Dip

Ingredients

  • 1/3 c x 4 cooked husk-less split matpe Beans mashed potato texture
  • 1-2 tbsp olive oil/vegan margarine
  • 3/4 tsp cumin powder
  • 3/4 tsp coriander powder
  • 1/4-1/2 tsp turmeric powder
  • 1/2 of a large onion chopped
  • 1 tsp minced garlic ready to use
  • 1/2 tsp minced ginger ready to use
  • A pinch or two cinnamon powder
  • 1/2 c vegetable broth
  • 1 large tomato chopped
  • Freshly cracked black pepper
  • Salt to taste

To serve

  • Coriander leaves chopped
  • Naan bread toasted

Turn into powder

  • 1 black cardamoms
  • 3 cloves
  • A small piece of nutmeg

Instructions

  • Dry-fry spices, set aside (dry fry: frying without oil, like toasting on pan)
  • Heat oil, saute onion and garlic followed with ginger
  • Stir in fried spices and matpe Beans
  • Pour broth
  • Add in chopped tomato
  • Season
  • Serve sprinkled with chopped coriander and naan chips
