Quite simple to prepare but delicious, if I may say so myself. Of course I am biased, as my husband cooked it 😀

- 2 tsp ground black pepper
- 1/2 tsp Szechuan pepper powder
- 2 tsp mustard powder
- 1 tsp store-bought minced garlic
- 1 tsp ground allspice
- 1/2 tsp cayenne pepper
- 2 tsp vegetable oil
- 1 1/2 kg rib of beef
- Preheat oven to 325 F. Combine ingredients, stir in oil
- Rub spice evenly over surface of beef. Place meat in shallow roasting pan. Insert thermometer, not touching fat. Don’t add water
- Roast uncovered for 2 1/2 – 3 hours
- Take roast out of the oven when meat thermometer registers 170 For more
- Trim excess fat and carve into 1/4 inch slices
